There is no question that Italians have a passion for good cooking. When you start with incredible ingredients it's much easier to make simple dishes taste sublime. We'll make dishes that are representative of the country as a whole using authentic ingredients and tried-and-true preparations.

About our Date Night Series: Come out and spend and evening cooking with the special person in your life. These cooking classes are part learning, part socializing and all fun! You will work side by side to make a three course meal and then relax and enjoy dessert prepared by Conquering Cuisine. Each session will also feature a signature cocktail!

Sunday Sip and Savor: Tacos and Tequila
Tequila's popularity has grown steadily over the years, not only as a drink but as an ingredient in Southwestern and Mexican fare. There are a number of premium tequilas on the market these days. We'll feature three tequila cocktails and give an overview of how tequila is made and what to look for when looking for quality producers. We'll then make four courses inspired by Mexico and the American Southwest that use tequila as an ingredient.

The menu consists of: Tequila Flamed Shrimp Tostados with Drunken Pinto Beans and Fresh Guacamole; Chorizo Stuffed Roasted Peppers with a Creamy Tequila Tomato Sauce; Chipotle-Tequila Marinated Skirt Steak Tacos with Shredded Lettuce and Salsa Verde; Chocolate Mousse with Tequila Caramel and Shortbread Cookies.

A Taste of Rome
The cuisines of Italy are much like the language, while it share a lot of common elements it varies by the region. There are 20 different regions, from mountainous to coastal and everything in between. This class is part of a series that explores some of the regional differences in the food and why every Italian is so proud of the their specialties.

The menu consists of: Fennel and White Bean Soup with Cherry Tomatoes and a Trio of Herbs; Pasta served with a Traditional Sauce of Guanciale, Tomatoes and Pecorino Romano; Chicken Saltimbocca with Sautéed Mushrooms and Roman Style Gnocchi.

Date Night Class: Flavors of France
No country combines food and romance better than France. Their contributions to the food world are unmatched - dishes that are an amazing mix of great ingredients and classic cooking techniques. We'll dig into elements of French cooking by featuring a menu of seasonal dishes.

An Evening with Duckhorn Vineyards
A wine dinner featuring one of Napa Valley's premier wine producers. Instructors are Mike Conti and Lynn Apple of Duckhorn Vineyards

Co-founded by Dan and Margaret Duckhorn in 1976, Duckhorn Vineyards has spent forty years establishing itself as one of North America's premier producers of Napa Valley wines. From its modest inaugural vintage of 800 cases of Cabernet Sauvignon and 800 cases of Merlot in 1978, to its addition of Sauvignon Blanc in 1982, Duckhorn Vineyards has crafted a tradition of quality and excellence that continues today.

The menu consists of: Parma Ham, Brie and Caramelized Onion Flatbreads; Grilled Mixed Mushroom Salad with Mixed Greens, Crispy Pancetta and Mustard-Shallot Vinaigrette; Roasted Vegetable Stuffed Chicken Breast with Butternut Squash Gratin and Herbed Jus with Mascarpone Polenta; and Chocolate Cream Filled Cupcakes with Crème Anglaise.

We'll show you how to create great French-inspired dishes and serve them with a authentic Sangria.

About our Date Night Classes: Don't just eat dinner, experience it. This interactive dinner is a fun way to celebrate a Saturday night. You'll see each dish prepared and while relaxing and socializing with the one you love. Like all our sessions, you be able to ask questions and get recipes for each of the dishes. To make the meal more special, we'll make a special cocktail to enjoy with the meal.

Last but not least, we'll also serve several craft beers during the session that are well-suited to grilling.

Summertime means warm weather, cold beer and barbecue. Come learn the fundamentals of great barbecue and how the long, slow cooking method used tenderizes the meat and imparts a wonder smoky flavor. It's not difficult and doesn't require a lot of fancy equipment but there are certain tips and techniques that will ensure success. You'll learn the cuts of meat typically favored, the role rubs play, the wood used and the regional styles that are prevalent in America.

Italian cooking is varied and rich in all its aspects but pasta and gnocchi have a special place in its history and traditions. As Italians emigrated to different parts of the world these dishes became an integral part of many different cuisines. This hands-on class will focus on kneading, rolling, cutting and forming fresh pasta, tortellini and gnocchi. Each with be paired with sauces complement their flavor.

The menu consists of: Fettuccine in Fresh Pesto Cream Sauce; Three Cheese Ravioli with San Marzano Tomato and Basil Sauce; and Ricotta Gnocchi, Sweet Corn with Pancetta and Cream Sauce.

Summer Wines and Italian Fare
In Italy, wine is a way of life. They have been making it for thousands of years and know how to enjoy it. Many wine varietals are available in the State and we'll taste five different styles, both red and white, all perfect for warm weather. Along the way you'll get a better understanding of how to navigate the complicated Italian wine regions and how they differ. In addition to expert wine instruction you will also be treated to a four course meal created to complement the wines.

Kids Summer Cooking Camp (4-day)
Hands-on Kids Series - Monday, June 27th to Thursday, June 30th, 9pm to 11pm

Four-part series of hands-on cooking classes for kids aged 10 to 12. Please note, the group dynamic is critical in these classes so this age range is firm.

The goal of this four-part series of hands-on classes is to teach kids fundamental techniques needed to prepare a variety of basic meals. Along the way we stress kitchen safety and the proper use of and care of cooking tools. Each class will begin with instruction on the recipes being prepared included understanding the ingredients, measurements and procedure. Participants then prepare the items listed in each class with the guidance and supervision of instructors. The menus are designed to stress fresh ingredients and kid-friendly flavors. As the class progress the kids get to eat the dishes they prepare and ask questions.

Part 1: Vegetables - In our first session we stress an important component of a healthy diet - vegetables. We will teach the kids how to clean, prepare and cook vegetables and turn them into delicious dinners with pasta and rice.

Part 2: Fish and Seafood - The task of getting kids to enjoy eating fish is made easier when they are involved in the preparation. We'll focus on fish and seafood that they are most likely eat and prepare it in ways that they will enjoy.

Part 3: Meat - This class focuses on techniques that take advantage of the versatility of chicken, beef and pork. After this class, your junior chef will be cooking fabulous dinners in no time. We will saute, simmer and grill to create seasonal dishes.

Part 4: Pasta - This class will focus on kneading, rolling, cutting and forming fresh pasta. Each with be paired with sauces complement their flavor.

Teen Summer Cooking Camp (4-day)
Hands-on Teen Series - Monday, June 26th to Thursday, June 30th, 12pm to 2pm

Four-part series of hands-on cooking classes for teens aged 13 to 14. Please note, the group dynamic is critical in these classes so this age range is firm.

The foundation of good cooking should be laid early. Proper knife skills, basic food safety, and the primary ways to cook food are important components of learning to cook. The goal of this four-part series of hands-on classes is to teach teens the building blocks by making foods that appeal to them. As with all our kid and young adult classes will we stress kitchen safety and the proper use of and care of cooking tools. Each class will begin with instruction on the recipes being prepared included understanding the ingredients, measurements and procedure. Participants then prepare the items listed in each class with the guidance and supervision of instructors. The menus are designed to stress fresh ingredients and introduce new and bold ethnic flavors. Ages 13 to 14.

Part 1: Basic Knife Skills/Soups and Salads - In our first session we stress an important of the most important tool in the kitchen - the knife. Participants with cut and slice their way through recipes for a delicious soup and a vibrant seasonal salad.

Part 2: Saute and Sauces - Sauteing is one of the most important techniques for making a wide variety of meals. Fish, chicken, pork, beef and seafood can all be sautéed so a young cook can benefit greatly by understanding and ultimately mastering the technique.

Part 3: Grilling - Why not start early learning to master live flame? We are in the perfect season to grill and so many great dishes can be made cooking outside. In addition to cooking chicken, fish and pork we will make sauces and salsas to accompany.

Part 4: Wok Cookery - This class focuses on healthy eating and the techniques and ingredients that promote it. We'll talk about how the wok can be a valuable tool in creating these recipes.

Homemade Ramen with Traditional Toppings
Ramen is an amazing noodle, especially when made fresh. Cooked and finished with s rich, savory broth and garnished with tender meat, vegetables and egg it goes to another level. The class will start with a light appetizer that we'll have made ahead. You'll prepare a tasty dipping sauce to accompany it. We'll then take start to finish through the process of making each of the components and show you how easy it is to do at home. You'll sit down and enjoy your creation at the end of the class.

The menu consists of: Traditional Homemade Japanese Ramen Noodles; Savory Broth with Ginger, Garlic and Soy;
Accompaniments of Shitake Mushrooms, Shredded Meat and Ramen Eggs; and Menema (Seasoned Bamboo Shoots)

About the Instructor: Gema is a Family & Consumer Sciences High School teacher in Bucks County. She has been cooking ever since she was able to hold a spoon. Gema traveled the world for a year living in New Zealand, Japan, Europe and teaching English in Italy. She takes cooking classes in every country she visits to learn the secrets of traditional cooking techniques. Gema fell in love with the wonderful unique cultures and delicious food and is excited to share this experience with everyone at Conquering Cuisine.

World Flavors: France
The birthplace of modern cuisine, France represents all that is right with food. Classic techniques, amazing ingredients and an incredible variety of dishes are represented on their tables. As a foodie, it's a fantastic cuisine to explore. We'll make dishes that are representative of the country as a whole using authentic ingredients and tried-and-true preparations.

The menu consists of: Basque Style Fish and Seafood Stew with Baby Potatoes and Herbs; Grilled Chicken Nicoise Salad with Green Beans, Hard Boiled Egg and Dijon Vinaigrette; and Chocolate Crepes with Caramelized Bananas and Fresh Whipped Cream.

Our international skills series focuses on areas of the world that have a particularly rich culinary history. Each session focuses on traditional recipes and authentic ingredients that reflect the food of the region. You'll make each of the dishes under the supervision of our chef instructor and enjoy each course as it is prepared.

Kids Summer Cooking Camp (4-day)
Hands-on Kids Series - Monday, July 11th to Thursday, July 14th, 9pm to 11pm

Four-part series of hands-on cooking classes for kids aged 10 to 12. Please note, the group dynamic is critical in these classes so this age range is firm.

The goal of this four-part series of hands-on classes is to teach kids fundamental techniques needed to prepare a variety of basic meals. Along the way we stress kitchen safety and the proper use of and care of cooking tools. Each class will begin with instruction on the recipes being prepared included understanding the ingredients, measurements and procedure. Participants then prepare the items listed in each class with the guidance and supervision of instructors. The menus are designed to stress fresh ingredients and kid-friendly flavors. As the class progress the kids get to eat the dishes they prepare and ask questions. Ages 10 to 12.

Part 1: Vegetables - In our first session we stress an important component of a healthy diet - vegetables. We will teach the kids how to clean, prepare and cook vegetables and turn them into delicious dinners with pasta and rice.

Part 2: Fish and Seafood - The task of getting kids to enjoy eating fish is made easier when they are involved in the preparation. We'll focus on fish and seafood that they are most likely eat and prepare it in ways that they will enjoy.

Part 3: Meat - This class focuses on techniques that take advantage of the versatility of chicken, beef and pork. After this class, your junior chef will be cooking fabulous dinners in no time. We will saute, simmer and grill to create seasonal dishes.

Part 4: Pasta - This class will focus on kneading, rolling, cutting and forming fresh pasta. Each with be paired with sauces complement their flavor.

Date Night: A Sangria Party
With gardens in full bloom and vegetables at their peak, summer food is all about freshness. French cooking uses readily available ingredients like fresh herbs, ripe fruits and vegetables, vibrants olive oils and tasty cheeses to whip up unforgettable meals. We'll show you how to create great French-inspired dishes and serve them with a authentic Sangria.

The menu consists of: The Real Sangria; Smoked Ham Wrapped Cantaloupe with Mint and Port Drizzle; Grilled Shrimp Brochettes with Herb de Provence Marinade; Balasamic Glazed Chicken with Authentic Ratatouille; Roasted Baby Potatoes; and Peach Melba Triffle.

Don't just eat dinner, experience it. This interactive dinner is a fun way to celebrate a Saturday night. You'll see each dish prepared and while relaxing and socializing with the one you love. Like all our sessions, you be able to ask questions and get recipes for each of the dishes. To make the meal more special, we'll make a special cocktail to enjoy with the meal.
